The team at the Pumproom use seasonal ingredients to maximum effect and, in keeping with the ethos of the distillery, takes a keen interest in provenance and minimising waste.

Having opened the very successful Copper Rivet Distillery in 2016, The Russell family, Bob and sons, Matthew and Stephen have done it again!

With the help of general manger Dominique Schefferlie, The Pumproom @ Copper Rivet Distillery opened its door in April 2021 and offers a relaxed fine dining experience.

Set in the historic Pumphouse built in 1873, you can dine in a large indoor dining room or al fresco on the dining terrace with breath-taking views over the River Medway and Upnor Castle or enjoy tapas and cocktails on the waterfront terrace or in the cocktail lounge.

Head chef, Will Freeman and his dedicated and very talented kitchen brigade use seasonal ingredients to maximum effect and, in keeping with the ethos of the distillery, takes a keen interest in provenance and minimising waste inventing a contemporary take on classic dishes influenced by spices and flavours from around the world.
